Horse bean with olive oil

Fava beans or horse beans in ancient Greece and Rome, were used in voting. Today, in Italy, horse beans are sown on November 1, for Tutti i Santi- All Souls Day.

Many farmers plant horse beans just because they replenish the soil with nutrient nitrogen. Fresh horse beans started to be found in the market to prepare a tasty fava beans with olive oil and to welcome the spring.

  • 1/2 kg fresh horse beans
  • 1 medium onion (chopped)
  • 2 fresh onions (minced)
  • 3 fresh garlic with stems(minced)
  • 3/4 cup water
  • 4 T. hazelnut oil
  • 4 T. extra virgin olive oil
  • 1/2 lemon juice
  • 1 tangerine juice
  • 1/2 t. sugar
  • salt
  • chopped dill to garnish
  • Wash the horse beans and pod cut them from both sides. If it is mature enough, take the beans out.

    Saute the chopped onion with hazelnut oil in the pressure cooker. Place the horse beans and the rest of the ingredients to the pressure cooker. Add salt, sugar, lemon and tangerine juices with 3/4 cup water.

    Cook 20 - 30 minutes until they are tender.

    Place the horse beans to a service plate, pour extra virgin olive oil and garnish with chopped dill. Serve cold with yogurt.
