Kabak çiçeği dolması

Stuffed zucchini flowers are the tastiest examples of Aegean cuisine. They are the top stars and are prepared with great labour. The dolma (meaning stuff or fill in Turkish) technique comes from Central Asia through Middle East to Aegean and Mediterranean area. This is another recipe from Ayvalık- Cunda cuisine.

  • 10 zucchini flowers
  • 1/4 cup rice (rinsed and let wait in hot water for 30 minutes)
  • 1 medium onion
  • 3 T. extra virgin olive oil
  • 1 T. pine nuts from Kozak plateau
  • 1 T. fresh mint (chopped)
  • a pinch of cinnamon
  • 1 t. currant (let them puff in water)
  • 1 T. chopped dill
  • salt
  • 1 t. sugar
  • black pepper
  • red pepper
  • Wash the zucchini flowers tenderly. Remove the pistils and check whether it has unwanted guests in it! Let them dry gently.

    Kabak çiçeği dolması-

    Chop onion fine and brown with pine nuts in hot oil. Add the rice, cinnamon, currant, salt, sugar, black pepper and red pepper. Add 1/4 cup water and let simmer. Turn the heat off and add the chopped dill and mint.

    Drop a spoonful of the rice mixture in the center of each zucchini flower and seal the petals with hands.

    Place a parchment paper at the bottom of the pot. Then place the stuffed zucchini flowers to the pot. Put an aluminium plate upside down (or some other weight) directly on the dolmas, to prevent the delicate flowers from unwrapping. Add 1/2 lemon juice and cook for 20 minutes with 1/2 cup water. Cool them without opening the lid.

    Serve cold.
