Cheese dessert (Kemalpaşa dessert)

A famous cheese dessert from Bursa city’s Kemalpaşa district. It is also called kirmastı around Bursa area.

First, the milk of cow pasteurized and transformed to get a fresh unsalted cheese special to this region. Then flour and egg added into it to make the dough.

Generally the dessert produced dry in Turkey, wrapped in packages and marketed all over the country. It is a dessert with syrup and served with clotted cream in winter while with ice cream in summer.

For the dough:

  • 1 1/4 cup flour
  • 2 eggs
  • 4 T butter (room temperature)
  • 150 gr whey cheese or sweet curd (crumbled)
  • 1 t baking soda
  • Beat eggs, blend with flour. Add baking soda, butter and whey cheese. Make a soft dough and knead until easy to handle. Roll into small balls like walnuts. Place them on a greased tray.

    Bake in 190° C pre-heated oven for 25  minutes until golden brown.

    Let them cool.

    For the syrup:

  • 2 cup water
  • 1 1/2 cup sugar
  • 1 t lemon juice
  • Put the water and sugar in a pot. Bring to a boil for 10 minutes, first stirring constantly. Simmer for 20 minutes and add lemon juice. Dip your first finger into the syrup, if it sticks to your thumb finger, it means that the syrup is ready.

    Then pour the rolls into the hot syrup. Boil them until the rolls soften about 10 minutes. Let them cool in the syrup.

    Serve either with clotted cream or clotted ice cream.
